C. acetobutylicum is used in both batch and continuous fermentations, producing more than 20 g l−1 total solvent from molasses, cassava, corn, or other raw materials. Other species in the genus Clostridium are also capable of the production of biochemicals and biofuels, such as 1,3-propanediol, butanol, acetic acid, and biohydrogen.

Spores of tetanus bacteria are everywhere in the environment, including soil, dust, and manure. Repopulation could significantly reverse the process of dysbiosis [59].

Clostridium acetobutylicum, which is also known as the ‘Weizmann organism,’ was discovered in the early twentieth century by Chaim Weizmann, working at the University of Manchester. The species of the genus Clostridium display heterogeneous phenotypes, and are able to grow over a wide range of temperature (3.3 to 80 °C) with optimum between 25 and 40 °C for most species related to dairy products. The combination of virulence factors produced is strain dependent. Endospore can be spherical or oval, are highly resistant to heat, chemicals, and desiccation, and therefore they can survive in adverse environment where they can germinate and convert to a fully active vegetative cell under favorable conditions. The genus Clostridium gathers all mesophilic anaerobic spore-formers encountered in food.

Tetanus is not transmitted from person to person. 44.1.

C. difficile Tn5398 confers resistance against macrolide, lincomycin and streptogramin B (Hächler et al., 1987).

Clostridium is a wide heterogeneous genus of microorganisms belonging to the Firmicutes phylum including approximately 231 species validly described (List of prokaryotic names with standing in nomenclature – genus Clostridium, http://www.bacterio.cict.fr/c/clostridium.html). The spores are oval, subterminal or terminal in position, do not bulge the parent cells and are produced in artificial medium after 72 h of incubation during decline phase of the growth. Table 2. relevant to dairy products are given in Table 1. C. perfringens cells proliferate after spore germination occurs, releasing a variety of virulence factors that can degrade tissue. Tetanus is an infection caused by a bacterium called Clostridium tetani. Cholangiohepatitis is related to C. perfringes toxin type A producers that arrive to the liver via the portal blood or bile, causing cholangitis, and occasionally focal necrosis, granulomas, and rarely massive liver necrosis (Opengart and Glenn Songer, 2013). C. perfringens produces a number of potent toxins, the most important of which is the a-toxin (phospholipase C), which causes host cell lysis and finally C. tetani produces an extremely potent single toxin (tetanus toxin) which underlies the pathogenesis of tetanus. The plasmids are detected in the bacterium with molecular weights ranging from 2.7 × 106 to 100 × 106, and the plasmids contain the genetic information required for their replication and maintenance only.

A few bacteria may contain introns (group I/II) associated with MGEs.

MODE OF TRANSMISSION: Transmission occurs through contamination of wounds with soil or foreign bodies carrying C. tetani spores Footnote 2, Footnote 7. d, digested (protein are totally metabolized with consequent clarification of the medium). Illustration of NGPs–host interaction might have a beneficial effect on its physiology via different mechanisms.

C. botulinum produces one of the most potent neurotoxins and is the cause of deadly botulism food poisoning.

Immunization is highly effective in preventing C. tetani infections in both children and adults and can also function to neutralize toxin after infection. Clostridia usually stain Gram-positive, most of them are strictly anaerobic, non-sulfate reducing, rod shaped bacteria able to form endospores.

The four clinically important species are C. tetani, C. botulinum, C. perfringens, and C. difficile.

C. tetani spores germinate in an anaerobic environment to form active C. tetani cells, which have a drumstick-shaped appearance. Several studies related to in vitro or in vivo effects of NGPs are compiled in Table 44.1. The preferred method of treatment is oral vancomycin or metronidazole plus rehydration.

The bacterium produces heat-resistant spores and grows without oxygen; consequently, botulism is most commonly associated with processed canned foods (Ahmed, 1991). According to the Health Protection Agency, the Clostridium genus consists of more than a hundred known species, including harmful pathogens such as C. botulinum, Clostridium difficile, Clostridium perfringens, Clostridium tetani, C. butyricum, and Clostridium sordellii.

Released exotoxin causes necrosis of the surrounding tissue.

Some strains also contain S-layer. The main driving forces for niche adaptation are environmental stress and nutrient availability. In the most common type, the spasms begin in the jaw and then progress to the rest of the body. The genome data have provided insights into the different sets of metabolic capabilities necessary for each Clostridium species to evolve and to occupy a specific environmental niche. However, they cannot tolerate more than 40 g/L ethanol concentration and are highly sensitive to chemical inhibitors.

Milena Brasca, ... Tiziana Silvetti, in Reference Module in Food Science, 2020. Longer half-life and high transition temperature allows the microorganisms to remain stable at high temperatures (Satyanarayana et al., 2013).

Clostridium grows well at body temperature; in stressful environments, the bacteria produce spores that tolerate extreme conditions. ScienceDirect ® is a registered trademark of Elsevier B.V. Spasms occur frequently for three to four weeks.

Clostridium species are anaerobic, fermentative, spore-forming Gram-positive bacteria belonging to the phylum Firmicutes. Some of the thermoethanologenic microorganisms are discussed in the next sections. Lecithinase can lyse white blood cells, enhancing its ability to evade the immune system and spread through tissues.

Over the years, the taxonomy of this genus has been revisited many times along with the progress of the molecular techniques and new evaluations are still ongoing thanks to increasing availability of genome sequences. The G + C content (mol %) of chromosomal DNA ranges from approximately 22 to 53, which is considered to be too extensive a range for a single genus. Besides, they can be differentiated based on their biochemical activities, including saccharolysis and proteolysis. J.P.
